Watermark has established a style of food preparation that caters to residents who have difficulty feeding themselves with cutlery. Under Director of Dining Services Rob Bobbitt, Watermark last year introduced Gourmet Bites, an initiative through which food is ground down and converted into bite-size portions—for example, chicken cutlet molded into the form of a cupcake and topped with mashed potatoes.
