Shelby County Schools has been leaning into a seasonal approach that includes more soups, fresh greens and baked sweet potatoes in colder weather and extra salad variations and cut fruit options in August and September. The district reopened its prep kitchen with a state-of-the-art wrapping machine that seals 41 meals per minute, providing prepackaged meals for after-school programs and emergency meals for the breakfast and lunch program. The district is in the middle of piloting a new concept for high schools that includes serving lines with themes such as Fast Pass, Tiger Lane, Falcon Favorites and 901 Eats. Lines are marketed with the relevant school mascot, and mascot-designed water coolers have been added in dining rooms.
