As the pandemic’s biggest disruptions to school foodservice recede, nutrition teams are still dealing with its many ripple effects. A majority of K-12 operators (66%) who participated in a recent FoodService Director survey say their programs are short staffed, and 85% say they are having difficulty procuring products. Nearly all are worried about rising costs. Even as the challenges mount, operators keep coming up with ways to make sure kids stay healthy and fed.
