Leaning into growing concerns about food allergens, MSU’s Culinary Services team last year opened Thrive, an all-you-care-to-eat dining hall that’s both sesame-conscious and free from the top eight allergens. Menu items at Thrive include chicken tenders, a housemade dairy-free yogurt and a variety of desserts. In addition, three retail dining locations in the MSU Union recently transitioned to new concepts that appeal to current trends: The Roost serves comfort food favorites, Street Tacostrue to its name—menus several types of tacos, and Unbelieva-Bowl offers a variety of greens, grains and hummus-based bowls. Campus retail options Sparty’s Market and Sparty’s c-stores have shifted their product mix from packaged goods to more custom grab-and-go items, including hot mac and cheese.
