In 2017, Rutgers Dining became one of only 50 C&Us to be accepted into “Menus of Change,” an initiative around healthy, sustainable menus that provides chefs with menu and recipe guidance. The program works to incorporate vegetables, whole grains, nuts and beans as center-of-the-plate items while serving less red meat and a greater variety of seafood. Rutgers’dining program also continues to hone its commitment to its “Feed People, Not Landfills” project in an effort to reduce its environmental footprint.
