This dish was a hit because we were finally able to offer a fun, globally inspired vegan option for students who truly wanted and needed it. And we were able to make it a K-12 reimbursable meal. Our Buddha Bowl has a base of spiced freekeh and brown rice, topped with chana masala, fresh hummus, roasted sweet potatoes and braised kale. Students could also opt for coriander-spiced crispy chickpeas, house-pickled radishes and onions, and Sun Dragon sauce—a finish sauce made from our Asian- inspired Dragon Dressing and sun butter.
