We introduced lomo saltado, a Peruvian dish from the “chifa” category—Peru’s Chinese-influenced cuisine. We offer theme meals each quarter in our dining commons, and after researching this cuisine, it seemed like a fun dish to try. Our students love the novelty of crispy potatoes in a stir-fry and the unique combination of flavors in the stir-fry sauce. We create our version out front and to-order at our Mongolian grill in the college’s Carrillo Dining Commons. The response has been overwhelmingly positive.
