Our kids, especially at the secondary level, love spice. Although we also introduced two other successful items this year—a beef gyro and chicken shawarma—the Nashville hot chicken really took off. The recipe is a take on the trending regional dish. Ours features oven-baked chicken with a handcrafted sauce of garlic, brown sugar and a precise blend of chiles, hot sauce and other seasonings. This dish fulfills our mission to expand on what the community considers to be “school food.” We just want to make great meals, regardless of setting.
