For our V.E.G. (Villanovians Eat Great) promotion, we introduced a whole-roasted vegetable carving station to promote two of Villanova Dining’s pillars of nutrition: make fruit and vegetables the center of your plate and decrease your animal protein intake. The vegetables were seasoned, roasted whole, presented at a carving station and carved to order. Everyone is used to carving stations where a chef slices meat, but when students realized these were vegetables, they were shocked and interested to see what the station was all about. That, in turn, boosted consumption. Presenting vegetables in new, visually appealing and appetizing ways makes the choice to eat healthy much easier.
