We created an open-concept action station inspired by my Italian heritage. I started making pizza dough from scratch this year, creating and baking pizzas in front of customers. The pizza roster includes pesto, vegetarian, meat lovers and a breakfast pizza with gravy, eggs, bacon and cheese, all using ingredients that are sourced locally whenever possible. We also use the dough to bake scratch-made bread sticks and garlic rolls with several variations, including the popular jalapeno and cheese.
