Pho-Nominal is our rendition of a Vietnamese pho bar, a fully customizable healthy lunch option. Guests start by choosing a protein—chicken, beef or tofu—and then move on to the vegetable choices. We offer bok choy, bell peppers, onions, broccoli, Napa cabbage, carrots, bean sprouts, mushrooms, cauliflower and other fresh options. At this point, we slightly stir-fry the veggies in a light sesame oil blend. Then guests pick a starch—rice noodles, green tea soba noodles or brown rice—and complete the dish with a rich broth (chicken, beef or vegan) simmered with cardamom, anise, garlic, herbs and vegetables. Adding a garnish of fresh cilantro, basil, scallions and/or an Asian sauce is the last step.
