2014 LTC/Senior Living Census: Ancillary foodservice locations gain in popularity

There were 238 respondents in our 2014 LTC/Senior Living Census Report. Each respondent operates foodservice in at least one of the following arenas: nursing home/skilled nursing/long-term care; assisted living; independent living or rehabilitation/psychiatric.

Sushi, deli bring big bucks to hospital café

Two new retail outlets at Florida Hospital Orlando are reaping dividends for the food and nutrition department. Sushi and a deli concept, 601 Deli, have brought incremental business to the hospital since they were introduced last fall, says Neal Lavender, director of food and nutrition at the 500-bed hospital.

The foodservice department at Hendricks Regional Health Danville, in Indiana, has created a program called Meals and More to provide seniors with a nutritious meal when they come to the hospital.

Texas Health Presbyterian Hospital Dallas could have a Chick-fil-A franchise in its main cafeteria as early as next March. Toni Watkins, director of food, nutrition and conference services for the 866-bed hospital, says that after a failed attempt several years ago, administration has given the green light to bring the fast-food company onto the campus.

When the traditional, cafeteria-style Parmalee dining hall at Colorado State University, in Fort Collins, quickly became the ugly stepsister to the newly renovated, market-style Corbitt dining center, the residential dining team had a problem.

A spirit of cooperation between a small Montana nursing home and a struggling Meals On Wheels (MOW) program has kept the senior feeding program alive. Candy Vincent, dietary manager at 38-bed Madison Valley Manor, in Ennis, Mont., says her skilled nursing facility saved the tiny program earlier this year by bringing it into the home.

We have increased revenue from guest trays to nearly $11,000 a month since we set up a system to allow patients and their visitors to buy trays using a credit card.
