Cassie Kelsch, the University of Utah’s apprentice chef, recently won the 2015 National Association of College & University Food Services Culinary Challenge—earning an ACF (American Culinary Federation) gold medal with her Pan-Seared Bison Flank Steak with Huckleberry Demi.
Competitors were required to incorporate buffalo flank steak, the featured protein, into their dishes.
The Culinary Challenge, which recognizes outstanding food preparation and presentation skills in collegiate dining services, took place on July 23 in Indianapolis at NACUFS’ annual conference.
