Tour de France Burger
Signature toppings can turn an ordinary burger into a craveable one. At Birchwood Cafe in Minneapolis, a grilled turkey burger gets a French twist via a creamy blue cheese-walnut spread, grape-rosemary salsa and aioli flavored with garlic scapes.

Reuben Burger
Slices of corned beef, Swiss cheese and sauerkraut layered on rye and grilled—that’s the way a Reuben usually comes to the table. But at Sugarfire Smoke House, a barbecue spot in St. Louis, the owners have transformed the ingredients into a burger topped with melted Swiss and sauerkraut.
Chef Frederick Guerrero combines grains and beans to make these vegan burgers. Farro provides a meaty texture, while red and green bell peppers add specks of color, and mushrooms, chipotle and cumin boost flavor.
Chef Sean Brasel spikes housemade aioli with habaneros and serrano chilies to fire up his signature burger, slightly mellowing the effect with tomato-bacon jam, melted cheddar and cool lettuce leaves.

Lamb Burger with Goat Cheese and Balsamic Onions
Differentiate the burger lineup by adding a new option for meat lovers. At Blackbelly in Boulder, Colo., ground lamb and pork are combined for a signature burger, adding a blend of rosemary, garlic, cumin and smoked paprika to jack up the flavor.
