University aims to appeal to flexitarian eaters

A dining hall at University of California at Los Angeles is opening a flexitarian bar, Daily Bruin reports.

Set to open in January, the bar will offer dishes that are vegetarian or incorporate less than a quarter of meat, such as Cajun shrimp and quinoa casserole. Rather than build a separate station, the dining hall’s current salad bar will be altered to include the new options.

UCLA dining services officials say the bar is intended to encourage healthy, sustainable eating on campus.
