Middle schools in Papillion La Vista Community School District in Papillion, Neb., have seen a 29% increase in school lunch participation after renovating their cafeterias to include food stations and an expanded menu, the Papillion Times reports.
The cafeterias have departed from a traditional cafeteria line to a scatter system where students visit different stations to receive meals. Students now choose from eight entrees each day and can grab produce from a self-serve fruit and vegetable bar.
School officials say the new setup has allowed students to receive their meals faster, and the expanded menu has reduced the amount of food that ends up in the trash.
