This healthy salad features diced tomatoes, cucumbers, avocado and spinach.
3 cups quinoa
1 ¼ qt. + ¾ cup cold water
3 cups fresh-diced tomatoes
3 cups diced cucumbers
1 ¾ cup +3 tbsp. onions, diced ¼-in.
2/3 cup + 1 tbsp. lemon juice
2/3 cup + 1 tbsp. olive oil
2 7/8 tsp. salt
12 frozen avocado halves
1 ¾ cup + 3 tbsp. feta cheese crumbles
11 ½ oz. fresh spinach
1. Combine quinoa and water and bring to a boil. Reduce heat, cover and simmer for 15 minutes, or until liquid is absorbed.
2. Transfer quinoa to bowl and add tomato, cucumber and onion. Stir to combine. In separate bowl, whisk olive oil, lemon juice and salt together. Add quinoa mixture to coat.
3. Place spinach leaves on plate and arrange avocado slices on spinach. Then spoon quinoa mixture over avocado. Sprinkle with feta cheese.
