Impossible Kofta with Mediterranean Vegetable Couscous

Plant-based kofta and couscous come together in this dish for a flavorful bite. 


For Kofta Kebabs:

2 3/8 oz Impossible™ Beef, ground

0.05 tsp. Mediterranean Oregano

0.05 tsp. salt

0.05 tsp. Pepper

0.05 tsp. Cinnamon, sticks

1/8 tsp. Allspice

0.05 tsp. Sumac

0.05 tsp. Paprika

0.05 tsp. Anise Seed

0.05 tsp. Pepper, Cayenne

1/2 cup Mediterranean Vegetable Couscous

1 1/2 tbsp Tzaziki Sauce


For Mediterranean Vegetable Couscous:

12 3/4 tbsp. morrocan couscous

3 1/4 tbsp. Cucumber diced

1 5/8 tbsp. Tomatoes diced

2 3/8 tsp. Jalapeno diced

5/8 tsp.  Basil, fresh, large sprig chiffonade

5/8 tsp. Mint, Fresh chiffonade

1 5/8 tbsp. Onion, Red

1 1/4 tsp. Lemon, juice and zest

1 1/4 tsp. Vinegar, Red Wine

1 1/4 tsp. olive oil, extra virgin

1/4 tsp. Salt

1/8 tsp. Pepper, black


For Kofta Kebabs:

  1. Blend all spices together
  2. Add spice blend to Impossible™ meat. Form 2.4oz kebabs.
  3. Place on grill and cook 2 minutes on each side, approximately 8 mins total (medium char with visible grill marks)


For Mediterranean Vegetable Couscous:

  1. Prep all vegetables according to size
  2. Cook couscous and allow to cool
  3. Mix all ingredients together until well combined
