Ful Medames Salad

The beans, tomato and fresh herbs in this salad make it a perfect side for barbecues.


1 15 1/2 oz. can brown fava beans (ful medames), drained & rinsed
1 diced plum tomato
1 scallion, thin sliced     
3-4 leaves fresh mint, chopped    
1/2 cup chopped fresh parsley, lightly packed    
1 clove fresh garlic, minced    
Salt to taste    
2 tbsp. fresh squeezed lemon juice   
1 tbsp. + 1 tsp. pure olive oil    


  1. Combine all ingredients and toss until thoroughly coated.
  2. Refrigerate 1 to 2 hours before serving.
