Blue Cheese, Fig and Port Wontons

Figs and cheese, a classic pairing, are packaged in wonton wrappers and deep-fried for a portable savory. At Heritage Tavern in Madison, Wis., chef Dan Fox serves these as an appetizer or bar snack, but they are easily adaptable as party finger food.
 

Ingredients

1 cup buttermilk blue cheese
3/4 cup dried black mission figs
2 tbsp. port wine
Pinch of salt
25 wonton wrappers
1 egg
1 qt. vegetable or canola oil

Steps

1. In food processor, process cheese, figs and port wine until well combined to create filling mixture. Add salt to taste.
2. Place about 1 teaspoon of cheese mixture in center of each wonton wrap.
3. Beat egg; brush egg along edges of wonton wrappers. Fold wrappers to desired shape, enclosing cheese mixture. Press edges to seal.
4. Heat oil in large, deep pan or deep fryer to 350 F. Fry wontons, 6 to 8 at a time, until golden brown. Serve immediately.
