Hot weather already has hit some parts of the country, but Memorial Day weekend signals the “official” start of summer for many Americans. To get guests in the spirit, add one of these summery dishes to the menu—and serve them al fresco, if possible. 

1. Beet and Watermelon Salad

This simple salad tastes like summer in a bowl, with fresh watermelon, beets, basil, olive oil and vinegar. To turn it into more of an entree, add cubes of feta cheese or crumbled goat cheese.

2. Grilled Mahi Mahi Sandwich with Mango Slaw

For a healthier take on the usual fried fish sandwich, chef Hatfield of Sodexo grills mahi mahi with a spiced honey glaze and layers it on a whole-wheat bun. A minty mango slaw adds a refreshing twist and makes tartar sauce unnecessary.

3. Blueberry Jerk Barbecue Sauce

A blend of sweet, sour and savory ingredients is what gives a classic barbecue sauce its authentic flavor. Here, chef Morse combines blueberries with bacon, garlic, onions, ketchup and two vinegars, then kicks up the heat with a generous measure of jerk seasoning paste. The sweet-spicy barbecue sauce pairs especially well with pork ribs and chicken.

4. Cod Ceviche with Pickled Pears

Fresh cod is marinated with lime juice to form the base of this ceviche, and pickled pears, chilies and rutabaga add additional layers of flavor. Chef Pyles not only contrasts texture and acidic elements in this dish, but also adds bright pops of color with red quinoa and trout roe.

5. Avocado Chicken Sliders

Throwing burgers on the grill is a rite of summer. The Slider Bar Cafe downsizes the classic and uses ground chicken instead of beef for its signature sliders, grinding the chicken in-house with Indian spices. Toppings of chipotle aioli and sliced avocado build layers of flavor. Serve a trio of sliders for an entree or pile them on a platter for guests to share with icy drinks.

Howard County Public School System in Ellicott City, Md., will be offering free lunch to students for two days during winter break, The Baltimore Sun reports.

This is the first time the district will be providing meals over winter break. The lunch will be served on Dec. 27 and 28 at two sites in the community.

About 22.2% of the district’s students are enrolled for free or reduced-price meals. The district served 66,276 meals last summer during its summer meal program .

Cranston School District in Cranston, R.I., has hired a collection agency to help reduce its lunch debt , NBC 10 reports.

The district’s chief operating officer sent a letter to parents saying that the district would be using a collection agency next year to collect outstanding lunch balances after other collection methods have failed. Parents who owe $20 or more and haven’t paid in the last 60 days will receive a letter from the agency starting Jan. 2, 2019.

When looking for a way to get more use out of its Canyon Cafe, open during the weekends only, California Polytechnic State University in San Luis Obispo, Calif., tried something new: free cooking classes.

Classes are open to students, as well as faculty and staff, and are taught by Campus Dining Executive Chef Michael Albright, according to Mustang News .
