3. Bold flavors
When trying to figure out what flavor combinations strike a chord with students, Chris Burkhardt, executive director of nutrition at Cleveland Metropolitan School District, looks to convenience stores. “You won’t believe some of the flavors they put on chips today,” he said, adding that his team tries replicate the same bold flavors in their menu items. He also reminded attendees that the flavors that appeal most to kids might not sound that great to operators. “The products are not made for [us],” he said. “They may not resonate with me, but will resonate with [kids].”
