Because we are a small hospital, we may only need three or four servings of meatloaf, so instead of making a large loaf, we place the meatloaf mix into muffin tins. We can have enough on hand and reheat as needed. The added benefit is that it’s individually portioned
and they look like meatloaf cupcakes!
