Question of the Month: Sustainability

Should there be an "approved" definition of sustainability?

Earlier this month, we launched a new feature on our Facebook page called "Question of the Month." The idea is to get readers talking about issues that affect them, and well as encourage readers to view our Facebook page as a place they can communicate with us about what they like and what they’d like to see more of in the magazine and online.

Our first question was extremely timely, if limited in appeal. We asked readers to give us their thoughts on whether Congress was right to block the U.S. Department of Agriculture from implementing restrictions relating to tomatoes and potatoes on school lunch menus. We’ve chosen one reader’s answer to be featured in our January issue. Look for it on the Opinion page.

For our next question of the month, we’ve chosen the topic of sustainability. This is one of the hottest trends in foodservice, and yet no organization or government agency has really come up with an accepted definition of what sustainability is. Some operators have even told us that they can’t use the term because the USDA hasn’t defined it. So our question is this:

Do we need one “approved” definition of sustainability? If so, what do you believe it must contain?

Log onto our Facebook page to join the discussion and offer your suggestions. Again, we will select one provocative answer and print it in our February issue.

This is our last newsletter of 2011. I’d like to take this opportunity to wish all our readers a happy holiday season. We look forward to again providing you with valuable information in 2012.
