We just received the fresh fruit and veggies grant from the USDA, and the first day of the grant was Jan. 20, Inauguration Day. We thought it would be a fun idea for the students to make the snack for the day a red, white and blue fruit parfait. The parfaits were made of blueberries, non-fat yogurt and strawberries. We just wanted to kick off the grant, but we also wanted to tap into the excitement of the country on the day.
