Bowls have been trending for a couple of years now but have exploded of late. The elimination of self-serve salad bars have made the bowl the preferred vessel for menuing a chef-created or composed salad. Global preparations and comfort foods also adapt well to this preparation. And with most operators cutting back on customization, some are offering bowls of base ingredients and separate containers of cooked proteins, sauces and garnishes for guests to personalize their meals to taste.
