Dried Fruit and Walnut Salad with Cheddar Cheese

Yield: 6 servings

12 oz. mixed greens (baby greens, chopped romaine, spinach)
12 oz. Mandarin oranges, well drained
12 oz. dried fruit (combo of apricots, mangos, apples, pineapple, cranberries, blueberries, cherries, golden raisins)
12 oz. cheddar cheese, cubed
12 oz. toasted walnuts
Raspberry vinaigrette

1.    Divide  mixed greens onto 6 plates. Top with  mandarin oranges, followed by dried fruit. Add  cubed cheese and finish with walnuts. 
2.    Serve with raspberry vinaigrette or other desired dressing/vinaigrette.
