Smashed Avocado Toast With Grapes, Pistachios and Jalapeno

Restaurant Associates gives avocado toast a facelift and flavor lift with a few new add-ins. Juicy grapes, crunchy pistachios and spicy jalapenos add varying shades of green and textural interest to this menu must-have. This avocado toast is a good fit for an all-day breakfast program.


2 tbsp. chopped scallions

1 large ripe avocado, pit removed and skinless

1 tbsp. chopped parsley

1 tbsp. olive oil

1 tsp. lemon juice

Salt and pepper to taste

4 slices bread

1/2 cup sliced green grapes

1/4 cup toasted pistachio nuts

8 paper thin jalapeno slices

Salt and pepper to taste


  1. In medium bowl, mash scallions, avocado, parsley, olive oil, lemon juice, salt and pepper together with a potato masher or the back of a large fork.
  2. Toast desired bread.
  3. Smear mashed avocado mixture evenly on top of the four toast pieces; top with grapes, pistachios and jalapenos.  Serve within 10 minutes.
