Pork Fajita with Mango and Blueberry Salsa
These fajitas get a fresh burst of flavor with the addition of a mango and blueberry salsa.
Ingredients
1 tsp. chili powder ground
1 tsp. garlic powder
1tsp. onion powder
½ tsp. oregano
1/3 tsp. smoked paprika
1/3 tsp. cumin, ground
1/8 tsp. black pepper
1/8 tsp. coriander, ground
1/3 tsp. salt, kosher
5 1/3 oz. Always Tender® Pork, Blade Meat
1/3, mango, unripe
1/8 red bell pepper
1/8 jalepenos
1 tsp. scallion
1 1/3 tbsp. blueberries, fresh
½ tsp. cilantro
1/3 lime, juice and zest only
1 tortilla, corn mini
Steps
- Combine all spices and pork blade meat to marinate.
- Combine mango, peppers, blueberries, scallion, and cilantro. Season with salt & pepper, dress with lime juice and set aside.
- Sear pork blade meat in hot saute pan or flat top grill. Cook thoroughly.
- Warm corn tortillas on grill.
- Top tortillas with pork and salsa.
