Sodexo, the foodservice provider to many college dining, corporate and healthcare locations, recently partnered with Impossible Foods to add that company’s plant-based burger to their menus. Sodexo chefs created several burger variations to signaturize the patties, including this Indian-accented version garnished with tandoori aioli.


Tandoori aioli

1 tbsp. vegan mayonnaise

¾ tsp. tandoori marinade

1/8 tsp. lemon juice

1/8 tsp. ground cumin


¼ tsp. garam masala spice

1 plant-based burger patty

¼ cup kachumbar (chopped tomato-cucumber salad)

2 tbsp. pickled red onions

Green lettuce leaf

1 tbsp. tandoori aioli

1 whole wheat burger bun, toasted


1. Prepare tandoori aioli: In small bowl, mix all ingredients until blended. Refrigerate until ready to use.

2. For burger, sprinkle patty with garam masala on both sides. Grill on each side until slightly charred. Place burger on bottom of bun; top with cucumber salad, pickled red onions and lettuce. Spread tandoori aioli on top of bun; place on burger patty.
