Signature Series: Salads

Everyone offers the classic Caesar salad, but these salad variations bring a little more excitement to menus. As part of our ongoing Signature Series, we asked operators to share their favorite salad recipes.

New health-focused dining hall opens at UCLA

New menu items include quinoa, local produce, greens and more.

One of our dietetic interns collected uneaten food from waste bins and built a “waste buffet” to demonstrate to students how much food they take but don’t even touch. 

The new revamped menu features fish tacos, Thai vegetable dumplings, burritos and more.

UB has also added more vegetarian options, low-fat yogurt bars, soy milk and more.

Some colleges and universities go above and beyond in their efforts to serve fresh, wholesome meals to the students who are living and studying there.
