Students at Villanova University in Villanova, Pa., are on top of wellness trends. To keep up, dining hosted a two-day culinary conference focused on vegan and vegetarian cuisine. Training consisted of presentations on trends, recipe testing and technique coaching. Before the conference, staff would often try to use eggs in vegan dishes. “Now they feel empowered to make new things,” says Alicia Farrow, nutrition marketing manager. Villanova’s chefs recently came up with a way to turn its zucchini and onion jam sandwich into a fully vegan option.
