The residential dining halls at the University of Missouri, in Columbia, are officially trayless. After completing a process that was initiated nearly two years ago upon student request, trayless dining was phased into Plaza 900, the largest of the campus’ six residential dining halls. The move to trayless dining has helped the program in a multitude of ways, according to Michael Wuest, marketing manager for campus dining, including convenience for students, freeing up of staff, and a reduction in water usage and food waste. After successful tests during summer orientation programs in 2011, trays were removed hall by hall. Plaza 900 was the last to be incorporated due to the existing dish return system for which a tray was required.
