When it comes to retail operations, healthcare and college operators say food and labor costs are the two most challenging aspects, according to The Big Picture research. Operators were asked to judge how challenging each of eight retail areas was, on a six-point scale with six being extremely challenging and one being not at all challenging. This data shows the percentage of operators who selected either a six or five on that scale.
