4. Mediterranean Walnut Nachos
Oldways is a nonprofit that supports and promotes plant-forward diets, including those of the Mediterranean region, parts of Africa, Asia and Latin America. While nachos are often served loaded with meat and cheese, this recipe uses walnuts and hummus as toppings, piling on vegetables such as olives, tomatoes, peppers, cucumbers and red onions. For a healthier spin, the base is composed of pita chips instead of fried tortilla chips.
