Mediterranean Walnut Nachos
Oldways is a nonprofit that supports and promotes plant-forward diets, including those of the Mediterranean region, parts of Africa, Asia and Latin America. While nachos are often served loaded with meat and cheese, this recipe uses walnuts and hummus as toppings, piling on vegetables such as olives, tomatoes, peppers, cucumbers and red onions. For a healthier spin, the base is composed of pita chips instead of fried tortilla chips.
¾ cup diced English cucumber
½ cup pitted and quartered kalamata olives
½ cup diced roasted red bell pepper
½ cup quartered grape or cherry tomatoes
½ cup minced red onion
2 tbsp. chopped fresh oregano
1 tbsp. lemon juice
1 tbsp. olive oil
1 container (10 oz.) hummus or 1¼ cups homemade hummus, divided
1½ cups pita chips, divided
1 cup coarsely chopped lightly toasted walnuts, divided
½ cup crumbled feta cheese
- In medium bowl, stir together cucumber, olives, red pepper, tomatoes, onion, oregano, lemon juice and olive oil.
- Spread half the pita chips onto a serving platter; drop half the hummus over chips in small spoonfuls. Sprinkle with half the vegetable mixture and half the walnuts. Repeat steps.
- Sprinkle cheese on top and serve immediately.
