With Super Bowl Sunday coming up on Feb. 7, it’s time to get your snack game on for the big game. Watch parties will be smaller this year, but the food can still be great. These five recipes take the usual chips, dips and wings up a notch or two.
Chef Brandon Hicks takes cues from the Syrian, Moroccan and Greek baking tradition to create these savory cheese pastries. He uses sheets of brix or phyllo dough to enclose the cheese filling, creating a cigar shape. The crisp snacks are served with a sweet-hot honey dip.
These empanadas are given a twist with a filling of spiced lamb and a dip of red chimichurri sauce. Chef Alex Mandolini uses prepared empanada dough rounds to save labor, and the turnovers can be baked ahead and frozen to save time.

Surf ‘n Turf Sliders
Chef Lamar Moore takes the classic surf ‘n turf combo and downsizes it into a slider. The surf component is shrimp, while the meat component is ground beef. A cheesy mustard sauce completes the build.
Chef Christian Gosselin upgrades the classic tater tot by braising pork shoulder in a flavorful stock, then forming the tender meat into small balls. The balls are enrobed in a potato mixture and deep-fried, then served with a ketchup-based housemade condiment.
This tostada can stand in for the traditional game-day nachos. The vegan-friendly recipe starts with a ground plant-based meat blend spiced with taco seasoning. To keep it plant-based, use vegan cheese, sour cream and mayo instead of the dairy versions.
The nutrition team is working to make sure that the entire student body, which represents 20 different countries, is able to experience a taste of home when they sit down for lunch.
