Sparkling Thai Lemonade

Gingerroot, fresh lemon juice, yuza juice, club soda combine with lemonade to create an Asian twist on the summer favorite.

Ingredients

75 slices peeled gingerroot
125 oz. prepared Crystal Light Lemonade Flavor Dink Mix (double strength)
3 cups + 1 tbsp. fresh lemon juice
6 tbsp. + 21⁄4 tsp. yuza juice
50 fresh mint sprigs, divided
1 gal. + 21⁄4 qt. ice cubes
75 oz. club soda
25 lemon slices

Steps

1. For each serving: Muddle three gingerroot slices in cocktail shaker.

2. Add 5 ounces Crystal Light, 1 ounce lemon juice, ¾ teaspoon yuza juice, 1 mint sprig and 1 cup ice cubes; cover with lid. Shake until blended.

3. Strain and pour over additional ice in glass. Add 3 ounces club soda. Garnish with remaining mint sprigs and lemon slice.
