Ranchero Grilled California King Salmon Steak

These salmon steaks are full of spicy goodness. Fresh roasted corn salsa is a great accompaniament to the full-flavored fish.

Ingredients

1 cup orange juice
1⁄2 cup lime juice
1⁄4 cup olive oil
4 garlic cloves, crushed
6 serrano chiles, seeded and minced
4 tsp. lime zest
8 6-oz. salmon steaks

7-8 ears of corn, roasted and cut off cob
3 1⁄2 cups black beans, cooked
4 Roma tomatoes, diced
2⁄3 cup green onions, thinly sliced
2⁄3 cup cilantro, chopped
1 tsp. chili powder
2⁄3 cup reserved marinade

Steps

1. In a bowl, whisk together orange and lime juice, oil, garlic, 1⁄3 of the chopped chiles, lime zest, and season. Reserve 2⁄3 cup. Place salmon steaks in remainder and marinate 1-4 hrs.

2. In a large bowl, combine corn, beans, tomatoes, green onions, cilantro, remaining chiles, chili powder, and reserved marinade. Season to taste, and let stand 30 min.

3. Remove salmon from marinade and grill, approx. 4 min. per side.

4. Serve salmon on a bed of roasted corn salsa.

The University of Maryland will begin offering weekly specials at all of its dining halls this semester, The Diamond Back reports.

The weekday specials will allow Dining Services to offer past menu items that students miss as well as new dishes students have been requesting, according to a spokesperson.

Students can find out which specials are being offered each week via dining hall table tents as well as through Dining Services’ social media. During select weeks, the specials may reflect a particular theme, such as Taste of the South.

They are big and branded, and have the portion requirements. They say “Taste something new today” on one side, and we support our local farmers on the other. As The University of Chicago Medical Center prepared for the revamp of one of its kitchens to feed an additional 202 patients, it wasn’t just foodservice executives coming to the table to make decisions.
