Mediterranean Pasta Salad
Mediterranean flavors such as sun-dried tomatoes, kalamata olives, cucumber and spinach make this pasta salad something special.
2 cups cavatappi pasta
1 cup fresh spinach chiffonade
1⁄4 cup sliced kalamata olives
1⁄4 cup diced seedless cucumber
1⁄8 cup chopped sun-dried tomatoes
12 grape tomatoes, halved
6 basil leaves, chopped
1⁄4 cup olive oil
Generous splash of red wine vinegar
2 tsp. dry Italian herb mix
1⁄4 cup feta crumbles (optional)
Salt and pepper to taste
1. Cook pasta as directed on box. Drain and rinse in cold water.
2. In large bowl, mix remaining ingredients except feta cheese. Add pasta and toss lightly. Sprinkle feta cheese on top if desired.
3. Garnish with fresh basil leaves. Serve as side with wrap or sandwich.
