Gluten-free Fried Chicken

Cook the perfect chicken with this recipe from Cornell University, Ithaca, N.Y.


4 6-oz. skinless chicken breasts
5 eggs
1 cup cornstarch
1 cup grits
Salt and pepper to taste


1) Dip chicken in beaten egg; then dredge in seasoned cornstarch /grit mixture. Chill.
2) Dredge in cornstarch grit mixture again.
3) Deep-fry in clean canola oil at 350°F, until 165CCP or finish in oven to 165 CCP after initial deep-fry. Serve with grilled broccoli.
