This warm salad combines spicy chorizo with milder white beans and olives. A drizzle of sherry wine vinegar and a sprinkle of sweet paprika make it superb.
3 tbsp. olive oil
2 onions, coarsely chopped
5 tsp. garlic, chopped
12 oz. chorizo sausage, 1⁄4-in. slices
5 cups large white beans, cooked
3⁄4 cup green olives, pitted and sliced
Salt and pepper, as needed
1⁄2 tsp. sweet paprika
1⁄2 cup parsley, chopped
3 tbsp. sherry wine vinegar
1. In a large pan, heat oil until hot but not smoking. Add onions and cook until translucent, about 5 min. Add garlic and continue to cook about 3 min.
2. Add chorizo to pan and heat through. Add white beans and olives and sauté. Season with salt, pepper, paprika, and sherry wine vinegar. Mix in parsley and serve.
