Fresh Fruit Tart
Tarts are a fun way to get fruit on the menu. This version features either lemon or strawberry banana yogurt, blueberries, kiwi and oranges.
2 oz. lemon or strawberry banana yogurt, fat free
1 tart shell (pie, phyllo or graham cracker)
1/4 oz. fresh blueberries, washed, patted dry
1/2 slice kiwi fruit
4 orange segments, pithed, pitted
4 seedless grapes, de-stemmed, sliced in half
1 slice fresh strawberry
1 tsp. honey
1 oz. Cool Whip Lite
1. Spoon yogurt into tart. Top with blueberries, kiwi, orange segments, grapes and strawberry in circular pattern around tart shell.
2. Cool in refrigerator for about 1 hour. Brush with honey as a glaze.
3. To assemble, place tart in center of plate. At base, garnish with kiwi, orange segment, grape, dollop of whipped cream and mint leaf.
