Farro and Golden Apple Salad
Golden apples and chopped vegetables make a light contrast to the thickness of farro for this fiber-filled salad.
5 cups farro
2 cups golden apple, diced
1/2 cup black olives, sliced
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced
1/4 cup red onion, diced
1/4 cup cherry tomato, 1/2-in. cut
1/4 cup parsley, chopped
1/4 cup carrots, chopped
1/4 cup Craisins
Sea salt and fresh ground pepper to taste
1. Cook farro in water until tender. Drain well. Set aside to cool.
2. Prepare apple, olives, peppers, onion, tomatoes, parsley and carrots.
3. Transfer cooled farro to a large bowl. Add remaining ingredients and toss. Salt and pepper to taste.
