Special diets call for menu revisions

Vegetarian, vegan and gluten-free options will be more prevalent.

April 3—At California State University, Long Beach, dining services is revising its menus to respond to demands for options from those customers who follow special diets.

Vegetarian, vegan or gluten-free customers will now have more options that will be communicated on easy-to-read menus so they can easily make the right choices.
