Beef producers anxious over "pink slime" deadline

Schools must decide by Monday to keep serving trimmings or reject them.

May 16—Beef Products Inc. is waiting with bated breath this week as it struggles to recover from the uproar over its lean beef trimmings.

By Monday, U.S. schools had to finalize their ground beef purchases with the U.S. Department of Agriculture, which supplies bulk commodities to districts enrolled in the National School Lunch Program. Two months ago, in the midst of the raging "pink slime" controversy, the USDA said it would allow local schools to opt-out of accepting beef containing BPI's signature product, officially known as Lean Finely Textured Beef.

The U.S. Department of Agriculture has announced changes to its standards for meals provided through its National School Lunch and Breakfast programs.

Applying to the 2018-19 school year, the USDA’s new School Meal Flexibility Rule gives districts the ability to serve low-fat, 1% flavored milk as well as the nonfat flavored milk they are currently allowed. In addition, districts that meet the current “Target 1” sodium requirements will no longer need to further restrict sodium levels for 2018-19.
