Personalized allergen safety
"The number of students that need allergen-safe foods seems to be growing," says Judy Gipper, director of dining services at Western Michigan University. The center’s My Pantry concept seeks to give these students more options and flexibility. To be able to use the microrestaurant, they must register with the disabilities council on campus. They then meet with a registered dietitian, so that each student's dietary needs can be cataloged online, where students can order their meals. For additional food safety, diners can only enter the grab-and-go section of My Pantry via access card. The microrestaurant has its own dishes, washer and prepping area, and employees have allergy-safe certifications.
