Easter kicks off the month by coinciding with a very different sort of marketing opportunity: April Fools’ Day. To celebrate Easter this year, students at St. Louis University in St. Louis can enjoy an Easter brunch on campus. Dining staff will serve up a special menu that includes spiral ham, quinoa with roasted vegetables, candied yams with marshmallows and more. Students will also get the opportunity to decorate their own Easter cupcakes.
The iconic sandwich gets its due this month. The University of Michigan in Ann Arbor will celebrate the day a little early (on April 5) by serving grilled cheese at two of its dining halls.
Operators can highlight environmental awareness with the menu and by hosting activities around waste reduction and sustainability in the dining hall. Last year, Atlanta Public Schools switched to a vegetarian menu for the day, serving up dishes such as garden vegetable pizza and black bean and corn quesadillas.
