At Corning, Inc. in Corning, N.Y., lunch includes a rotating selection of toppings on personal-size pizzas, including classics like pepperoni and tomato mozzarella, as well as more upscale ingredients, says Mike Osborne, dining services supervisor. The company’s corporate, research and manufacturing locations in and around Corning, N.Y., also offered a by-the-slice breakfast pizza from 7 to 10 a.m., but sales averaged only five orders a day.
Then Corning switched from sourcing a round frozen pizza crust to a rectangular frozen flatbread for its lunch pizzas, and Osborne decided to experiment with a breakfast version. One of the most popular kitchen staff concoctions is the Meat Lovers version, topped with sausage gravy, strips of bacon, ham, cheese and whole fried eggs. The revamped “breakfast flatbreads” are offered for $2.10 each, and a.m. pizza sales have increased, Osborne says.
