1) Spanish tortilla
A traditional Spanish dish, this meal also goes by the names tortilla espanola, tortilla de patatas or tortilla de papas. But unlike its name suggests, tortillas aren’t involved at all. Instead, tortilla in this case refers to the diminutive form of torta—cake. This dish is comprised of potatoes and eggs, and sometimes onions, chives or garlic.
To make a Spanish tortilla, potatoes are cut into thin slices or a small dice, then seasoned and sauteed until they are soft but not brown. Then, the potatoes are mixed with beaten eggs and returned to the heat to fry slowly. Other ingredients like bell peppers, chorizo or other sausage, tuna, shrimp or different vegetables, can be added. Spanish tortilla can be eaten hot or cold—similar to a quiche.
At Texas A&M’s Sbisa Dining Hall, one of the largest dining halls in the country, the Spanish tortilla is a new menu addition.
